Day 23
Well, it is another pleasant day for three of us. The main reason here, study. Attend the only lesson for the day, Management of Food safety. It sometime making us perplexed where we travel more than one an a half and lecturing for that one just hour. But anyway, today lesson was on topic ciguatoxic where we learn how to prevent it from occurring especially on marine products some examples are Eel, Lyretail Grouper, Black fin red snapper, Tiger Grouper. Though we don’t eat them often, usually on special occasion like wedding, as currently there’s no quick and reliable screening test for detecting such toxic therefore preventive measure is put in place. Next we are given something familiar which is the sampling test where we covered subjective sampling and how sampling test is begin carry out.
After lesson, we lunched at a Thailand restaurant then off for our leisure activity. And get back to the hostel and not long later we got our dinner.

Day 22
Today we have the trip to the fruit juice factories .It located at the west side . Once we reach the factories , we ask to separate in to 2 groups because the the first batch will go around the factory to have a look at the processing of the fresh fruits and juices .As for the second batch we are ask to do the Sensory evaluation test of the orange juice . We are given 3 different type of juice to test out which is fresh , which did u prefer , how much will you willing to pay and etc . After we end our test the lady tell us a lot about the factory but to us we don't really understand .hahaah
soon its our turn to go around the factory , first we have to wear the lab coat face mask and hair net then we went to the production line but before that we have to wear the shoe cover and sanitize our hands . when we go in to the place it was about in 5 to 8 degree Celsius this prevent the fruits from spoiling fast . they have divide the place in to different section like the section to cut the fresh fruits , the section for the machines to squeeze out the fresh orange juice from the whole orange . Then the fresh juice will with store in a tank before it will be fill in to bottles . before the fruit are been process they need to go through sanitizing , after that we head to two cold room its very cold and the cold room 1 is use to put the fresh fruits and juices as for cold room 2 its use for storing the fruits before its being process .
The staff over there also tell us that they do also provide fruits to hotel and airport , after this we end our trip to the factory. ( Btw we are not allow to take photo in the factory, but we still manage to take some! :P)

Day 20,21
In the afternoon, together with BCT friends we when to explore sham shui po! We walk around their streets market and lastly went to a dragon centre one of the shopping hall in sham shui po, while walk we found a sushi restaurant that offer sushi buffer. You can eat as many as you like in only HK$42 (abt S$8 - 10) !! but ofcuz the ingredients they use is not very good n fresh. Took some photo!
27/10 (Mon)
In the morning went to sensory evaluation of food lesson, we learn new things! example: Central Limit Theorem & Testing hypothesis) All this method require a lot a lot a lot of Maths! ( A Math). We are not very sure for this method but Ms Isabella and our HK classmates is very helpful. Sometime Ms Isabella will stop the lesson to guild us in the calculations. After lesson saw BCT friends in the library so went lunch with them!
Back from lunch we went attend a practical on manufacture of bottled pickles & carbonated drinks. This practical is for the students from applied nutritional science, you might be thinking why nutritional science's student study about the manufacturing of food? They learn about the processing equipment too! Finally we get the answer form Ms Fong that the nutritional science job in HK is not a lot and the market is small. Therefore the school hope to wider the nutritional science students job scope, let them understand the process of food manufacturing so that after the graduated beside working in nutritional science area they can also work in the food industry.

Day 18,19
Friday
I guess shopping walkathon in HongKong is nothing new to anyone right? That is what we will be doing from now on. But wait, these are all weekend entertainment. So, we started of on Friday, Sight-seeing on Saturday. Based on the template given, the best area for us will be at Tsim Sha Tsui. As stated, there’s a few factory outlet clothing but at there we can only see outlet with “SHOP” clothing so we decide to walk from Tsim Sha Tsui to Mong Kok where ladies and arrays of market is. On map, they are actually four stop of train stations away from one another and incredibly the whole stretch of the street we passes are with small shops. Of course between it we have our dinner at a Seafood stall along the temple street and follow up by dessert that cost a bomb. Then we continue our shopping at ladies market where most of us got, get and getting the stuffs we want there.
Saturday
As on planned, we went to The Peak. It really an incredible experiences for us as we will never see such engrossing scene over in Singapore. Firstly on recommendation we took the peak tram which had been operation more than hundred years beside it own historical stories what attract us more is to travel on the tram at 45degree. We too went to the sky terrace where it showcases the city’s skyline and harbour especially in the night time. With such spectacular view offering there, we had our dinner at a fast food restaurant to enjoy the fabulous view.

Day 17
At 10.30 to went to school for our sensory evaluation of food practical lesson, we are doing the three sensory test method. Namely Paired-Comparison Test, Duo-Trio Test & Triangle Test. In the practical lesson the class in divide into 6 group, 2 groups doing triangle test and their sample were coke and Pepsi. Another 2 groups doing duo-trio test their sample were saltine crackers, the last 2 groups doing paired-comparison test their sample were yogurt. The objective of test is to find out:
Triangle test - To determine if there is a different in sensory between 2 beverage sample.
Paired Comparsion test - To determine which of the yogurt is sourer.
Duo-trio test - To determine which saltine cracker is saltiness as the reference.
It is quite interesting to do all this test and through this lesson we get more closer with our Hk classmates!
After lunch in school we went to Management of food safety lesson, Mr Ng show us a video about the processing of salad. From the video he explain to us the different between Critical control point and control point. After video we got a short lecture on different Import & Export procedures.

Day 16
After our lunch we went to Olympic to meet up with Gary , Yong Hui and Amin to shop around. Unfortunately there is not much to shop around there , thus we head for some bowling games . The bowling over here is quite cheap for the students .
After that we decide to head back to our hostel for dinner and that the end for the days. As for tomorrow we have our first Sensory Evaluation Practical lesson, hope it will be fun =)

Day 15
It was half pass five in the evening, and our school actually provides shatter bus to a nearby train station and just by taking another public bus it brings us to a bustop near our hostel so we decide to take the ride. It a new experience as we finally get a chanc e to travel on ground and passes through the city area where there are skyscrapers, building, and sea scene. And charge is cheaper than the usual fare!
We then have our dinner at MayFair garden which is five minute walk from the hostel.

Day 14
Our lesson start at 9.30am, we are quite tired as yesterday we went to ocean park. Today in sensory evaluation of food lesson, we learn about statistical analysis method - Binomial Distribution. In binomial distribution there are two kinds of analysis method, namely by formula and binomial probability table. We found out that probability table is much more easier then formula, formula require a lot of calculation and we still trying to understand it ( A-Maths sia !!).
Example Qns:
In a family of 4 children, what is the probability of having
(i) Exactly 2 boys
(ii) At most 2 boys
(iii) At least 2 boys
Using the the formula:
B(x) = (n,x) px (1-p)n-x
After our lesson Ms Isabella came to talk to us, she ask us to write a report (1000-1500 words) on the differences between Singapore Food Factories and Hong kong Food Factories and she will grade us according to our report. But we did not visit any of the food factory in HK? thus we ask Ms Isabella is it possible for us to visit some food factory in HK, coincidentally one of the class will be visiting a juice factory in HK and we will be joining them!
After lunch with HK classmates, we found out that they normally had their lunch at nearby shopping mall as they feel that the canteen food is not nice. And in HK they do not have foodcourt or coffeeshop like SG so they normally eat in restaurant or cafe, it is quite ex! ( But it is really nice) Soon we went to Food lab to do lab work.
When we reach the lab Ms Karen told us that she is quite busy this week and might not able to arrange Lab work for us to do, thus she ask another technician Mr Patrick who take care of the Food Technology Lab where all the equipment is localed to teach us how to operate the different machine. My Patrick teach us how to operate Spray Dryer, Can Sealer and retort. It is very interesting although we had studied in SG about all this machine but we did not operate this machine before as our lab are new and is not fully equipped yet. After some chat with Mr Patrick we found out that he had been working in IVE for more then 1o years! and he looks like 3o years old at most. And almost all the lecturer and technician worked in IVE for more than 10 Years!

Day13
On the Friday we don't have school thus we decided to stay in the hostel to do our SFMA project report then around evening we went for our dinner and shop around. As for Saturday we stay in the hostel the whole day as well as to keep our energy for Sunday.
Today we went to the Ocean Theme park to enjoy ourselves after two weeks of studies ! So before that we went for breadfast at 10am to replenishes ourselves before the exciting ride.The journey to the Ocean Theme Park was from a tunnel to and other tunnel. Soon we reach the Theme Park , it seem to be very big because its like a combination of escape, underwater world cable car , seaview and the panda from china that are entrusted to be kept in the Ocean Theme Park which singapore don't have. There was one more special point was , they did celebrate the Halloweeing and the staff over there will dress up in the halloweeing costume to start scareing the people around. Some even dress up in the halloween costume just to join the fun and add on to the atmosphere. The halloween night seems to be fun but we only bought the 10 to 6pm tickets and there goes the fun of the night :(
After that we went over to the Avenue of Stars because every weekend at 8pm they have the shows where the buliding will start to light up and the lights will go arrouding to the music and if you ar lucky it may have some fireworks. After the show everyone seems to be tired and needed a rest. Thus we head back to to kwai Fong to have our dinner and head back to hostel.
